Banana Bread with Mac-Nut Crumble Topping Recipe

Banana bread is a year-round staple in our home and we have perfected or recipe using local Maui sourced ingredients to make a delicious banana bread, in one bowl for easy clean up. Our traditional recipe includes Maui apple bananas, Hawaiian sea salt, local honey, and freshly roasted macadamia nuts but you can easily use this recipe with available ingredients.

Banana Bread with Mac-Nut Crumble Topping Recipe

Ingredients

  • 3 very rip bananas peeled & mashed

  • 1/3 cup butter, melted

  • 1/2 teaspoon baking soda (not baking powder)

  • 1 pinch Hawaiian sea salt

  • 1/2 cup Hawaiian honey  (add 1/4 cup if you like it extra sweet)

  • 1 large egg, beaten

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

This recipe calls for an 8- x 4-inch loaf pan and bakes for 47 to 57 minutes.

3 Ingredient Macadamia Nut Crumble Topping

Ingredients

  • 3/4 Hawaiian macadamia nuts

  • 3 tbs brown sugar

  • 1 tbsp butter, melted & cooled

  • 1 pinch Hawaiian sea salt (optional)

Preheat the oven and prepare the pan:

Preheat the oven to 350°F

Butter or parchment line an 8 x 4-inch loaf pan

Prepare Mac-nut crumble topping:

Add macadamia nuts, brown sugar and butter to a food processor, and pulse until the mixture resembles coarse sand

Mash the bananas and add the butter:

In a mixing bowl, mash the ripe bananas with a fork until completely smooth

Stir the melted butter into the mashed bananas

Mix in the remaining wet ingredients:

Beat egg lightly on top, stir in honey and vanilla extract

Add remaining dry ingredients:

Mix in the flour, baking soda and salt.

Pour the batter into your prepared loaf pan.

Sprinkle mac-nut crumble over bread

Bake the bread:

Cover with foil to prevent burning the topping and remove foil at 15 minutes remaining on bake time

Bake for 55 to 65 minutes at 350°F or until a toothpick or wooden skewer inserted into the center comes out clean.
